Traditionally considered as the "queen of the aperitif", the Blanc de Blancs can also accompany a dinner based on fine and iodised dishes like lobster or oysters. "A hard cheese also suits it very well," says the winemaker. With time, it will gain in roundness, fleshiness and smoothness. To be avoided: dishes in sauce.

To make the Lemon Cress and Onion Petals Scallops recipe:
-The watercress: Wash and remove the leaves from the watercress. Remove some of the tops and keep them in a cool place. Plunge the rest into boiling salted water for 10 minutes, drain and then plunge into iced water. Drain again and blend to obtain a fine purée. Strain through a sieve. Season with olive oil, lemon vinegar and salt.
-Parsnips: Wash, peel and trim the parsnips, then fry them in a little olive oil, season with salt and white wine. While they are still a little crunchy, remove them and season them with almond oil and a little fleur de sel.
-Red onion: Wash, peel and slice thin slices of red onion with a mandolin. Pour in the white balsamic vinegar and leave to marinate.
-The purée: Mix the almond purée and the watercress purée. Stir with a little almond oil and season.
-The scallops: Fry the scallops with a drop of olive oil.
